Blow off from the Prez

Welcome to another addition to Blowoff from the Prez.

I wanted to recognize everyone who participated in the Hogtown Brewoff in May. Matt, Dave, Kevin,
Sonia, and myself were all there. SAAZ did well in bringing home some medals: Dave won a gold
medal with his Sassy Rose Hippocras mead and Anne won a gold medal with her Hippie Chick Dubbel
(she won the kit in a raffle, thanks to Sunseed for donating it). Hopefully we have even more people
win and enter in CASK’s First Coast Cup in July. Also, we look forward to thoroughly reviewing these
beverages at the Summer Party.

As I type this, we are getting things ready for this year’s Commander SAAZ Interplanetary
Homebrew Blastoff. There will be more on that below. In case you missed it, Josh and I brewed the
commemorative beer during the AHA Big Brew Day at Sunseed. This year’s beer is a Terrapin inspired
SAAZilla Double IPA. In fact, as I type this, I’m getting the demijohns ready to transfer the beer onto
an insane amount of citra dry hops!

That’s about all the new goings on. So, I’ll keep it short and sweet. This newsletter goes out to a lot
of new faces that have recently joined the club; we look forward to seeing everyone at the Summer Party.

Next Meeting – Summer Party! June 18th (Saturday)

This month’s meeting will be the fabulous Summer Party at Chet and Sonya Spark’s in Titusville.
Since the newsletter is now posted on the website, we will be emailing out directions.

As with most parties, we will need your help setting up and breaking down, and a little fun in between.
If you can help setup, please get there around 11am. The club will be providing Santa Maria Tri Tip
roasts, hopefully ready around 1pm.

So, what will you need to bring?

  • Your Lawnmower beer entry (kegs are easiest, but all containers are welcome)
  • A side dish or dessert
  • Your swimsuit and a towel for the pool
  • Ice for the beer engine
  • A lawnchair
  • Sunscreen
  • More beer

As always, you are welcome to set up a tent and camp out at the Sparks’. We want to make sure
everyone is safe and at the next event!

4th Annual First Coast Cup
July 29-30 2011 Jacksonville, FL
What: The first three years have been a resounding success and CASK is striving to make the 2011 First Coast Cup the best yet. With over 300 plus entries each of the last three years, they are anticipating even more entries this year. Don’t forget about the “Big Wood” category for wood-aged beers with an original gravity of 1.070 or greater. More information to come soon.
When: July 29-30th. The entry deadline is TBD.
Where: Hilton Garden Inn located in Tinseltown on the Southside of Jacksonville. This location is conveniently located next to Seven Bridges Grille & Brewery

SAAZ members are encouraged to participate in judging, stewarding, etc if possible.  CFHB members always come over to help with Commander SAAZ judging, so let’s help them out, too! Go to cfhb.org/mead for more information.

Commander SAAZ Interplanetary Homebrew Blastoff 2011

The entry window opens on August 29th and slams shut on September 25th.  Due to scheduling, we will only be doing one weekend of early round judging, and we will need your help!

Early round judging will be held the weekend of October 7, 8, and 9 at the International Palms Resort and Conference Center in Cocoa Beach (formerly the Holiday Inn Cocoa Beach).

Final judging, the Splashdown Party and awards ceremony will be held the weekend of October 14-15 at the International Palms Resort and Conference Center in Cocoa Beach.

Rooms are available for early round judging and the event weekend for the low price of $69.99 (a really great rate for a beach front hotel!). I have been told that the hotel is in the process of remodeling all the rooms. One of our club members went there to see the new rooms, and they look great. All rooms should be completed by June; plenty of time before the competition.  Just call the reservation line at 321-783-2271 and mention code HBC. In addition to the standard rooms the International Palms also has oceanfront suites and lofts for $139.99 + Tax

This rate is only good until October 2nd so don’t wait too long!

Winners receive not only intergalactic recognition but the coveted Commander SAAZ Medal and a fabulous prize from one of our generous sponsors. The best of show beer and mead/cider winners will also be awarded the Commander’s Cosmic Trophy and the acclaim of the known brewing universe. Whoever sends the Commander into orbit with their Rocket Fuel (10% abv and above) will also receive the coveted Rocket trophy!!!

So, all you mild-mannered homebrewers out there get your kettles boiling and unearth those bottles you’ve got stashed in the back of the fridge!  Engineers, rocket scientists, and other cosmic creatures are ready and waiting to judge your brew.

Local Events

June 4 through 11th – World of Beer Most Bitter Bar

WOB had a good run for the most Arrogant Bar in the nation, but fell short. Frankly, Drew is not
happy. In fact, he’s resentful, you could say he is in fact bitter. He feels you should be too. So as an
expression of his troubled emotion, WOB is going to show the nation that they are now the most bitter
bar. From June 4 to 11 they will drown their frustrations in some of the nation’s hoppiest beer. Time
to dust the boots and bring them back in. They will be showcasing Stone IPA, Ruination, Sublimely
Self Righteous, Cali-Belgique and a chance for a rare double dry hopped cask. Come enjoy these bitter
beers at arrogant prices!

WOB Cruise

On September 23rd, WOB will sail with Monarch of the Seas from Port Canaveral to the Bahamas;
three days and nights of nonstop fun and excitement with all your friends from WOB. Call Cruise Fun

the cruise. The cabins are filling up. Don’t hesitate to secure your cabin, you can get a full refund by

Cooking with Beer – Beer-Brined Chicken

Brine and Chicken

  • 2   cups water
  • 1/4     cup kosher (coarse) salt
  • 1/4     cup packed brown sugar
  • 4   cans or bottles (12 oz each) beer or nonalcoholic beer, chilled
  • 2   cut-up whole chickens (3 to 3 1/2 lb each)

Barbecue Rub

  • 1   tablespoon paprika
  • 1   teaspoon table salt
  • 1/2     teaspoon onion powder
  • 1/2     teaspoon garlic powder
  • 1/2     teaspoon pepper
  • 1/4     cup vegetable oil

Preparation:

  1. In 6- to 8-quart noncorrosive (stainless steel, enamel-coated or plastic) container or stockpot, mix water, kosher salt and brown sugar, stirring until salt and sugar are dissolved. Stir in beer. Add chicken. Cover; refrigerate at least 8 hours but no longer than 24 hours.
  2. Line 15×10-inch pan with sides with foil. Remove chicken from brine; rinse thoroughly under cool running water and pat dry with paper towels. Discard brine. Place chicken in pan. Refrigerate uncovered 1 hour to dry chicken skin. Meanwhile, in small bowl, mix all rub ingredients except oil; set aside.
  3. Heat gas or charcoal grill for indirect cooking. Brush oil over chicken; sprinkle rub mixture over chicken. For two-burner gas grill, heat one burner to medium; place chicken on unheated side. For one-burner gas grill, place chicken on grill over low heat. For charcoal grill, move medium coals to edge of firebox; place chicken over drip pan. Cover grill; cook 15 minutes.
  4. Turn chicken over; cover grill and cook 20 to 30 minutes longer, turning occasionally, until juice of chicken is clear when thickest piece is cut to bone (170°F for breasts; 180°F for thighs and drumsticks).

Brewing Education

Fermentation Temperature Control Tip – By: Jonathan Plise

Temperature control during fermentation is the most important process in making beer. In my 9 years running our Concord, California showroom many customers have asked “What can I do to keep fermentation temperatures cool without having to buy a refrigerator or your temperature controlled conical?”.  One method, commonly discussed on the internet, is placing your carboy in a shallow pan filled with water and covering that with a t-shirt. The evaporation of water up through the t-shirt can cool you fermenter up to 5 degrees off the ambient temperature. However in the middle of summer this is just not enough. One of my favorite methods is placing my carboy or bucket into an ice water bath.
